- 1lb pork tenderloin, cut into 1-in. cubes
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 medium green or pepper, chopped
- 3 garlic cloves, minced
- 1 cup chicken stock
- 2 cups pineapple cubes
- 1 cup Schultz's Gourmet Sweet Hickory Barbecue Sauce
- 1/2 cup packed brown sugar
- 1 small can chipotle peppers, chopped in adobo sauce
- 2 tablespoons reduced-sodium soy sauce
How To Make
STEP 1: Sprinkle pork with salt and pepper. In a large skillet, heat oil over medium-high heat. Add pork; cook until browned, 4-6 minutes. Remove.
STEP 2: In same skillet, cook onion and pepper until softened, 3-5 minutes. Add garlic; cook 2 minutes. Return pork to pan and stir in chicken stock. Cook covered over medium high heat until pork is tender, about 5 minutes.
STEP 3: Stir in pineapple cubes, Schultz's Gourmet Sweet Hickory Barbecue Sauce, brown sugar, chopped chipotle peppers, and 3 tablespoons adobo sauce; simmer, uncovered, until sauce is thickened, about 5-10 minutes. Serve, we recommend over rice or with quinoa. Enjoy!
