We're labeling this recipe as Tex-Mex with a twist! These tasty Buffalo Chicken Enchiladas are stuffed full of tender shredded chicken, lots and lots of cheese, and of course, Schultz's Gourmet Spicy Original Cooking Sauce. They're simple to make but are a totally delicious and mouthwatering meal!

- 3 tablespoons melted unsalted butter
- 4 cups shredded rotisserie chicken
- 8 ounces cream cheese, at room temperature
- 2 cups shredded Cheddar
- 1 cup Schultz's Gourmet Spicy Original
- 1 bunch scallions, thinly sliced (whites and greens)
- 1/4 teaspoon ground cumin
- 16 corn tortillas
- 2 tablespoons crumbled blue cheese
- 2 tablespoons blue cheese dressing
How To Make
STEP 1: Preheat the oven to 400°F. Grease a 9-by-13-inch baking dish.
STEP 2: Mix chicken, cream cheese, 1 cup cheddar cheese, 1/3 cup Schultz's Gourmet Spicy Original cooking Sauce, scallion whites and cumin in a large bowl until combined. In a medium bowl, stir together melted butter, remaining 2/3 cup Schultz's Gourmet Spicy Original Cooking Sauce and 3 tablespoons water.
STEP 3: Heat tortillas in batches, either on the stove or in the microwave until softened and foldable, about 30 seconds. Keep warm between damp paper towels.
STEP 4: Spoon a portion of the chicken mixture down the middle of each tortilla and roll up. Place them side by side, seam-side down, in the prepared pan. Pour the sauce mixture over the tortillas. Sprinkle with the remaining cheddar and blue cheese crumbles. Bake 14-18 minutes, or until cheese is melted and bubbling.
STEP 5: Drizzle enchiladas with blue cheese dressing and sprinkle with the scallion greens. Serve with additional Schultz's Gourmet Spicy Original Cooking Sauce on side. Enjoy!
