Grilled BBQ Chicken Cobb Salad

Say "goodbye" to boring salads! Loaded with grilled BBQ chicken, veggies, cheese, hardboiled eggs, bacon and topped with an incredibly creamy buttermilk ranch dressing, these Grilled BBQ Chicken Cobb Salads are the perfect dinner to make for when you're craving something quick, easy and healthy!

  • 2 heads romaine lettuce, chopped into bite-size pieces
  • 4 chicken breasts
  • 1 cup Schultz's Gourmet Original BBQ Sauce
  • 8 slices bacon, cooked and chopped
  • 2 avocados, diced
  • 1 cup corn
  • 1 1/2 cups sharp cheddar cheese, grated
  • 6 hard-boiled eggs, chopped
  • 3 roma tomatoes, diced
  • 1/2 red onion, diced
  • 1/2 cup buttermilk 
  • 1/2 cup sour cream or greek yogurt
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper, to taste
  • Schultz's Gourmet Original Seasoning & Rub, to taste

How To Make 

STEP 1: Heat grill to 400°F. Pat chicken dry and season with salt, pepper and Schultz's Gourmet Original Seasoning & Rub. Brush with barbecue sauce and add to grill. Cook for about 25 minutes, flipping chicken every 5 minutes. About 5 minutes before chicken has finished cooking, brush both sides once more with barbecue sauce. Chicken is done once internal temperature reached 160°F. Remove from heat and let cool.

STEP 2: Once chicken has cooled, roughly chop into bite-sized pieces. In a medium sized bowl, toss with remaining barbecue sauce. Set aside.

STEP 3: Next, make the buttermilk ranch dressing. In a jar or bowl combine buttermilk, sour cream, dill, parsley, garlic powder and salt and pepper. Shake or whisk until ingredients are thoroughly combined. Adjust seasoning to taste and refrigerate.

STEP 4: Wash the lettuce and pat dry with paper towels. Then chop the lettuce into bite-size pieces. Prepare remaining ingredients by chopping bacon, avocado, eggs, tomatoes and onions and grating the cheese.

STEP 5: Arrange barbecue chicken, corn, hard boiled egg, bacon, avocado,  tomatoes, onions on top of the lettuce. Serve the salad with ranch dressing drizzled over the top or on the side. Enjoy!
