- 17 oz Italian sausage
- 1/2 medium onion, diced
- 2 medium carrots, diced
- 2 sticks celery, diced
- 4 cloves garlic minced
- 1 Jar Pasta Jay's Creamy Tomato Sauce
- 14 oz can diced tomatoes, drained
- 4 cups chicken broth
- 9 oz packages refrigerated cheese tortellini
- 2 cups (packed) fresh baby spinach
- Salt & pepper to taste
- Freshly grated Parmesan cheese, for serving
How To Make
STEP 1: Remove sausage from casings and add to skillet, breaking into pieces as they brown. Add the diced onion. Sauté for about 7 minutes. Add the garlic in stirring until fragrant, about 1-2 minutes. Spoon most of the fat, but be sure to leave a very small layer, as this will improve the flavor of the soup. Add the sausage mixture to your Crockpot.
STEP 2: Meanwhile, dice celery and carrots. Add diced celery, carrots and remaining ingredients to your crockpot except for tortellini and spinach. Cook for 7-8 on low or 4-5 hours on high.
STEP 3: About 30 minutes prior to serving, add in your cheese tortellini and spinach. Stir occasionally until tortellini is cooked through and spinach is wilted and combined. Season with salt & pepper to taste and top with Parmesan cheese. Enjoy!
