Soup and summertime don't always go hand in hand, but this soup is just too easy and tasty to pass up—especially because basil is in season! This Tomato Basil Soup, is creamy, refreshing and packs the perfect punch of herbaceous flavors.
- 1 jar Pasta Jay's Tomato Basil Sauce
- 1 (14 oz) can Italian diced tomatoes
- 1 1/2 cups chicken stock
- 1 tsp oregano
- 1 tsp dried basil
- 3/4 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1 handful fresh basil, chopped
- 1/2 cup grated parmesan cheese, plus more for topping
- 1 cup heavy cream
How To Make:
STEP 1: In a large sauce pan, combine tomato basil sauce, diced tomatoes, chicken stock, oregano, dried basil, pepper, salt, and garlic powder over medium-high heat. Bring to a low boil, then reduce heat to medium-low.
STEP 2: Stir in heavy cream, grated parmesan, and chopped fresh basil. Using an emulsion blender, blend until smooth and cheese is melted (if you don't have a blender, feel free to stir by hand). Allow to cook over low heat for 10-15 more minutes. Taste and adjust seasonings. Top with additional parmesan and serve with crusty bread or a grilled cheese sandwich. Enjoy!
