This recipe for rotolo di spinaci recipe is perfect if you're looking for an easy showstopper to impress your family or dinner party guests. Delicious spinach and ricotta filling, is rolled up in lasagna sheets and baked in Pasta Jay's Tomato Basil Sauce, to make for a savory vegetable forward meal.
Ingredients
- 24 oz spinach
- 2 cups ricotta
- 1 cup Parmesan, finely grated, plus more for garnish and serving
- 3 cups Pasta Jay's Tomato Basil Sauce
- 2 tablespoons fresh oregano, chopped
- 8 lasagna sheets, cooked al dente
- 1 lemon, zested
- nutmeg
- salt
- pepper
- fresh basil leaves, chopped, for serving
How To Make
STEP 1: Preheat oven to 350°F.
STEP 2: Heat a small drizzle of olive oil in a large pan, add the spinach and cook until completely wilted (you may need to work in batches). Once cool enough to handle, squeeze the spinach to remove excess water then roughly chop
STEP 3: In a large bowl, mix the spinach with the ricotta, Parmesan and oregano. Season with salt, pepper, nutmeg and lemon zest to taste.
STEP 4: Pour Pasta Jay's Tomato Basil Pasta Sauce evenly over the bottom of an oven safe dish or pan.
STEP 5: Next, prep the rotolo. Start by spreading the spinach filling in an even layer over the lasagna sheets, then roll each sheet as tight as possible without squeezing out the filling. Place the rolled pasta in the baking dish and nestle within the tomato basil sauce.
STEP 6: Cover each rotolo with plenty of grated Parmesan and bake for 15 minutes or until spinach filling is warmed through and parmesan is melted. Top with fresh basil and serve. Enjoy!
