While this Italian Sausage Soup might look like other Italian soups (we can definitely see its resemblance to Pasta Fagioli or Minestrone), it has a beautiful and unique taste of its own. What really sets this soup apart from others is its use of beef broth, rather than chicken or vegetable. The beef broth truly compliments and brings out the rich, savory flavors of the Italian sausage, making for a hearty, warming meal!
- 1 pound Italian sausage
- 1 clove garlic, minced
- 14 oz cans beef broth
- 14.5 oz can Italian-style stewed tomatoes
- 1 cup sliced carrots
- 14.5 oz great Northern beans, undrained
- 2 small zucchini, cubed
- 2 cups spinach - packed, rinsed and torn
- ¼ teaspoon ground black pepper
- ¼ teaspoon salt
How To Make
STEP 1: In a stockpot or Dutch oven, brown sausage with garlic. Stir in broth, tomatoes and carrots, and season with salt and pepper. Reduce heat, cover, and simmer 15 minutes.
STEP 2: Stir in beans with liquid and zucchini. Cover, and simmer another 15 minutes, or until zucchini is tender.
STEP 3: Remove from heat, and add spinach. Replace lid allowing the heat from the soup to cook the spinach leaves. Once spinach is wilted, remove from heat and serve.
