Breakfast Sandwich with Tomato Basil Sauce

There’s nothing better than a breakfast sandwich with perfectly balanced flavors—especially first thing in the morning! With this recipe, you get a hint of sweetness from Pasta Jay’s Tomato Basil Sauce, a touch of creaminess from the white cheddar cheese, a little salt from the prosciutto and a kick of freshness from the spinach and avocado to really start your day off right!


  •  2 tablespoon olive oil
  •  1-2 cups  baby spinach
  • 1 garlic cloves
  • 1 cup Pasta Jay's Tomato Basil Sauce
  • 2 slices white cheddar cheese
  • 1 brioche bun or bread of your choosing
  • 1 avocado
  • 2 slices of prosciutto
  • 1 egg
  • Salt & Pepper

How to Make

Step 1: Heat a large skillet over medium heat and add the olive oil. Stir in the spinach and garlic and cook until the greens have wilted. Sprinkle with salt and pepper, set aside and wipe out skillet.

Step 2: Preheat oven broiler to high.

Step 3: In a small pot over low heat, warm Pasta Jays Tomato Basil Sauce. Note: To save time sauce can also be heated microwave. Simply place sauce in microwave safe bowl, and heat on high for 15 seconds, stir, and continue to heat for 15 second intervals until warmed.

Step 4: Heat 1 tablespoon of olive oil over medium high heat, in the same skillet that was used for the spinach. Once oil is hot, fry the egg, cooking to desired doneness. Season with salt and pepper. In the same pan, add prosciutto, allow to crisp slightly. Set aside.

Step 5: Slice buns or chosen bread, spread pasta sauce on both halves, top with cheese and place on baking sheet face up. Broil for 1 minute or until cheese is melted and bubbling. Keep a close eye on bread to ensure it does not burn.

Step 6: In the meantime, thinly slice or mash your avocado.

Step 7: Once cheese is melted and the buns are slightly toasted, begin assembling the breakfast sandwich. Add a dollop of pasta sauce on top of the melted cheese, top with the cooked spinach, followed by the avocado, prosciutto slices and your egg. Enjoy!
